Bayfront celebrations kick off with a three hour free-flow session of frozen lime margaritas, house pour spirits, wines, beers and bubbly to clink to under sun-soaked skies. As the stars of the evening make their appearance overhead, guests can tuck into a scenic Mexican seafood dinner by the water with sharing platters specially curated for the festivities.
Featuring popular seafood dishes inspired after regional specials across Mexico, this festive spread includes: crispy Corn Chips served with sikil pak, Oysters topped with fiery habanero and passion fruit salsa, Scallop Aguachile Shooters and fire-grilled Angus Beef Ribeye Steak dressed in earthy porcini and guajillo rub with cactus salad on the side, followed by pan-fried Veracruzana Barramundi. Singapore’s birthday comes to a close with a special locally-inspired take on a traditional Mexican favourite: crunchy Pandan Churros served with coconut dulce de leche.
