Revolver, the bold, fiery grill — headed by Executive Chef Saurabh Udinia — has opened on bustling Tras Street. The open-kitchen style concept embraces the fire of Indian cooking sensibilities, world-class premium produce and carefully selected global spices to create a progressive and exciting dining experience. Premium meats, seafood and vegetables alike are charred to perfection on the custom-built Woodfired grill, or the beautiful hand-built Tandoor. The grill launches with three tasting menus to guide diners through the array of dishes, along with an impressive wine, sake and cocktail list. Much-loved local wine and cocktail gurus, along with other familiar, warm hospitality personalities, welcome in guests for a relaxed, fun and creative gastronomic journey.
Considered one of India’s youngest and most promising culinary talents, award-winning Executive Chef Saurabh Udinia leads the vibrant team after his years of cooking in kitchens across the globe. His most notable work includes Indian Accent, known as one of India’s best restaurants, Farzi Café – an experimental modern spice bistro; Masala Library – a fine dining establishment; and modern Indian bar, MasalaBar.
Chef Saurabh says, “There’s something about the fire and flavour of grilling that I’ve always loved – used correctly and with the right ingredients, it can create an intoxicating journey of flavours in just one mouthful. We have created a refined selection of dishes that go beyond your typical grilled fare — interesting highlights include our Stuffed Courgette Flowers, Marga Lamb Chops and the Pulled Pork and Gruyère Kulchette.”
All three introductory dining menus at Revolver start with chef’s signature Stuffed Courgette Flowers, gently grilled, stuffed with a creamy cottage cheese mash and lightly finished with a spiced tomato relish. Berries, Cream and Almond Tuille, topped with pistachios, offer the perfect finale to all Revolver’s gastronomic experiences.
For a true, culinary immersion into Revolver, the 9-course Experience tasting menu (SGD 179++) offers just that. Premium highlights include the charred, juicy fresh Lobster with pepper garlic butter, the three-day marinated, charred Magra Lamb Chops, and not forgetting the Kashmiri chilli spiced Wagyu Scotch Egg.
The 8-course Discovery (SGD 139++) and Vegetarian menus (SGD 129++) ensure all diners can get a taste of the gastronomic show. The lemon-coriander, grilled King Prawn, along with lightly spiced Barramundi, cooked in the tandoor, finished with raw mango dust, feature on the Discovery menu. Leeks, grilled with smoked paprika butter and finished with pine nuts and fennel; as well as a Smoked Aubergine, delicately laced with cumin and fresh coriander, atop a crusty Gruyère Kulchette are thoughtful highlights on the Vegetarian menu.
A dynamic, interactive dining experience is not complete without carefully curated libations. Guests can leave it to Revolver’s expert wine sommelier for a 3- or 5- glass Wine Pairing menu (SGD 50++ and SGD 120++), or go full throttle with the Experience Pairing (SGD 168++) featuring her choice of cocktails, wine and sake. Unique, exciting and natural wines are also available by the glass and bottle. Cocktails include a heady Mandarin Negroni and a Tequila Spiced Rise to a lighter, refreshing Revolver Spritz.
Conceptualised by hospitality design veterans, Matthew Shang Design Studio, Revolver interiors are unashamedly bold yet refined, creating a vibrant atmosphere for a large dose of guaranteed escapism. Copper accents are married with metallic black and grey tones to add a sleek, industrial edge. The sunken open-style show kitchen is the heart of Revolver and is framed by a dramatic ziggurat-like copper hood. Countertop seats offer guests front row action of Chef Saurabh and his team, whilst booth seats, a large chef’s table and even a love seat for two offer something for group diners and lovebirds alike.
