
Shots on deck and champagne on ice: as fireworks light up the skies this National Day on 21st August 2021, Super Loco Customs House is delighted to welcome back guests to its bayfront cocina with a lively evening offering front-row seats to an unfettered, picturesque view of Singapore’s birthday fireworks show by the iconic Marina Bay waterfront.
The evening opens with a bed of sweet Irish Point Oysters, dressed with smoked tomato gel, coriander-avocado oil and spicy micro cress for a peppery punch. While being treated to a stunning sunset over a bottle of champagne, guests can indulge in a Mexican Carne Apache starter: seared Wagyu beef rump, avocado, and mixed micro greens drizzled with salsa verde and burnt onion mustard dressing.
In celebration of all things local, Super Loco Customs House offers a special locally-inspired menu marrying contemporary Singaporean and Mexican cuisine. In collaboration with Singaporean start-up Karana, the menu features sustainably-sourced jackfruit, a plant-based meat alternative as the star of the evening. Guests can look forward to achiote-marinated Karana Al Pastor Tacos: “pulled pork” in the form of jackfruit, grilled pineapple with charred habanero and pickle mayo. The delicate sweetness of young jackfruit shines through in Karana Enchiladas marinated in Mexican tajín, dressed with orange jalapeno verde, coconut-pumpkin salsa and accompanied by crunchy watercress salad and tomatillos.
As the fireworks commence, Singapore’s birthday comes to a close with one last bang from Super Loco’s festive National Day shooters that salute the nation’s flag: rosy Prickly Pear Chupitos and creamy Coconut and Pandan Chupitos.
